Made from the best hand-picked buds of high mountains old wild tea trees in Ha Giang, north of Vietnam, the tea master and his wife spend 2 months in the mountains during the tea harvesting session to make tea in a small hut he built. From tea picking to firing to rolling to packing, he handles the entire tea making process with his wife. The leaves are plucked from wild trees of the Assamica variety estimated to be hundreds of years old grown at 1800m-2200m. Sun-dried with no shaping, this tea style retains the enzymatic flavour notes of the terroir - soil, climate, wind, sun, and the old tea trees. The tea master is skillful in preserving these notes without diverting from these characteristics through his processing. We have been offering this tea for 3 years.
Brew Flavour
Using the Parchmen Glass Gaiwan, we are brewing this at 3g to 150ml of 90°C water for 1 min 15 sec for the first brew and reducing to 1 min for subsequent brews. Last year's Crescent Moon smells of flowers like red roses. This year, we detected a purple note, perhaps violet flowers. In fact, it is perfumy, with a bouquet of flowers and fruits. The tea retains the signature fruity sweetness reminding us of apricot, and sweet like sugar cane juice. With a high brewing temperature, the tea presents a thick and round mouthfeel, and it has a lasting and clean afterflavour reflecting its fresh harvest. A mild woody aroma will become more obvious as it ages, revealing the age of the trees they grew. This tea can be enjoyed thrice, and we aim for an integrated flavour of a sweet taste with a fruity aroma as we stretch it with more brews.
