2022 Pre-Qingming Harvest Jin Tan Sparrow's Tongue [Organic]

Produced around the famous Taoist mountain of Mao Shan (茅山) in Jiangsu Province, this tea is certified organic. Picked in the same manner as Bai Hao Silver Needle (白毫银针) and Golden Tippy (云南大金针), this tea is the green tea version. Resembling the tongue of a sparrow, the tea is fat and luscious, neat and shiny when dry, and performs a standing ovation under the water surface when brewed, elegantly descending to the bottom to signify it is ready to be drunk. As beautiful as it looks, it is delicious with strong roasted chestnut aroma, and a hint of flowers, on a vibrant mouthfeel.

This tea, like most of our teas on our curated list, is a historical tea since the Song dynasty. In fact, areas of strong religious history oftentimes produce exceptional teas, as it is recognised by Buddhists and Taoists that tea nourishes the body as much as the mind.
