Red Grapes | Pinot Noir | Prunes | Cream 


Colombia is no doubt a country that produces high quality washed coffees. This coffee is a mixed blend from two different regions of Colombia - Huila from the south and Antioquia from the central Andes mountain range. Southern coffees are known for high sweetness, caramel and juicy notes on a smooth and medium body and citrus notes. The central regions produce more balanced coffees that carry fruity and herbal/vegetal notes. At 650 km apart, it straddles Quindío where most of our Colombia coffees come from. 

Within Colombia, Huila holds the title as the most production region (department), with 35 of Huila’s 37 municipalities growing coffee. Dominated by small producers with small farms of 1.5 ha, most farms are located on nitrogen-rich volcanic soil between 1,200 and 1,800 m. On the other hand, Medellin is the capital of Antioquia and one of the largest growing regions in Colombia. Located in a narrow valley between two Andean mountain ridges, it is known as the City of Eternal Spring where smallholders cultivate coffee in small 3 ha land between 1,100 to 1,500m in pleasant climate. Most farms in these regions have their own wet mills, designing their own fermentation processes or simply relying on their tacit knowledge transmitted through the previous generations. It is no surprise that their coffees are distinctive and unique.

With a blend of these two coffees, one can expect a sweet and fruity coffee on a sugar browning base. Supremo is a Colombia coffee sizing grade of 17/18, translating to about 7 cm in bean size. Both coffees are sun-dried and not mechanically dried after the wet processing.


Roast Level
We have roasted this coffee light with about 2 min development with a medium ROR at the end and a high ending temperature. We hope to reduce rawness of these high density seeds, and tamper the acidity of the coffee to make it suitable for both espresso and filter, and so that it is also acceptable to new converts to specialty coffees. 


Brew Flavour
This coffee is suitable and economical as a filter as well as an espresso. On the brewer, we are brewing this coffee using 16g to 250ml of 90°C water at 700 µm grind size. We are using the Timemore Crystal Eye and Kalita Wave paper.  The dry fragrance has notes of grapes, cucumber and cream. In the brew, the coffee brightens up, like most Colombia coffee, to give notes of red grapes, plums, cream and sweet coriander seeds, with hints of stonefruits and tropical fruits like Australia mango coming and going as the temperature cools slightly. Body is smooth and medium, with an afterflavour of cream, tropical fruits and flowers. It reminds us of Pinot Noir. The inclusion of Huila in this blend reduces the herbal notes associated with the central mountain range. Our recipe is as follows:

0th sec - Pour 50g of water, in 15 sec
45th sec - Pour 150g of water to reach 200g, by 90th sec
100th sec - Pour 40g of water to reach 240g, by 110th sec

Colombia coffee are delicious in ice, clarifying to black grapes like Kyoho grapes and plums.
